Creamy Cheesy Sausage Pasta

Unique approach, secret ingredient or original cooking method that makes your recipe special

An old and much loved family favourite cooked in my house

What I use -
450g ground Italian sausage
450g penne pasta
1 tsp oregano
2 cups double cream
1/2 white onion minced
1 tbsp olive oil
2 garlic gloves, minced
1/2 tsp red pepper flakes
1/2 tsp salt
1 cup of fresh parmesan cheese
2 large handfuls of baby spinach

How to cook -
1. Boil a large pan of water and cook the penne pasta until soft. Whilst the pasta cooks, heat a splash of olive oil in a large pan over a medium heat
2. Cut the italian sausage into 1cm thick chunks and add to the pan to cook along with the onion, garlic, oregano and red pepper flakes until the sausage is fully cooked. Season with salt & pepper
3. Turn the heat to low and add in the 2 cups of double cream, bring to simmer and then add in the spinach
4. Cook together and regularly stir until the spinach starts to shrink
5. Add the parmesan to the mixture and when the cheese is melted, stir the pasta into the sauce
